karkówka duszona w piwie
No cóż, potrawa dla wymagających. I jeśli chodzi o przygotowanie (trochę czasu w sumie zajmuje), jak również przy konsumpcji.
Składniki:
- karkówka
- cebula
- czosnek
- kostka rosołowa
- skórki pomarańczy
- kilka suszonych śliwek
- suszone owoce jałowca
- ziele angielskie
- goździki
- mielona gałka muszkatołowa
- estragon
- no i piwko oczywiście
Przygotowanie:
Cebulę podsmażyć, w ostatniej fazie dodać rozciapciany czosnek. Wszystko odstawić. Mięso pokroić w plastry i ułożyć je na płasko w garnku, na cebuli. Dobrze, jak garnek będzie o dość dużej średnicy, tak, coby mięcho tworzyło jedną, płaską warstwę.
Zalać wszystko piwem, tak, żeby całkowicie przykryło mięcho (resztę piwa można już wypić 🙂 ). Kostkę rosołową rozrobić w niewielkiej ilości wrzątku i dolać do gara. Zasypać przyprawami, skórką pomarańczy (od serca) i dodać suszonych śliwek (dosłownie kilka). Zostawić wszystko na kilka godzin (może być nawet doba), niech się przegryzie.
Dusić na wolnym ogniu przez jakieś 30-45 minut.
Podawać z ziemniakami pure. Sos z mięsa można wykorzystać do polania ziemniaków.
